Treated with sulphur dioxide (SO2) in order to provide a lighter coloring and a longer shelf life, these sulphured dried apricots are a light yellow-orange.
This is to protect against microorganisms that could harm the apricots, and to protect the fruit’s natural color.
After this, the apricots are taken back outside, to dry in the sun.
